Origin of the grapes:They come from three certified organic vineyards in the San Rafael region, Mendoza:
• Finca Doña Elsa (Rama Caída)
• Finca Asti (Las Paredes)
• Finca Constanza (Cuadro Benegas)
The diversity of soils and microclimates in these vineyards allows for a complex wine, both in aroma and flavor, with mineral notes, red fruits, and delicate tannins.
Tasting notes:
This Malbec shows an intense color with purple hues. On the nose, it is fresh and intense, with red and black fruits, spicy hints, and subtle vanilla notes. On the palate, it starts sweet, with rounded tannins, balanced acidity, medium structure, and an elegant finish.
Winemaking process:
• Harvested when there is ideal balance between acidity, sugar, and polyphenols.
• Grapes are hand-selected and cold-macerated for 3 days.
• Fermentation is done with selected organic yeasts at controlled temperatures (max 30°C).
• 50% of the wine is aged in French oak barrels for 8 months; the rest remains in stainless steel tanks.
• 100% malolactic fermentation with native bacteria.
• Bottled unclarified, with coarse filtration, and aged in bottle for at least 4 months before release.
